Does any one controller have more options or better functions or will they all function about the same?

Neptunes Apex (classic if your looking for an affordable option).   There is no other controller even comparable.

They all do basic things the same. When some sensor does THIS tell that outlet to do THAT. That sort of stuff is easy - really easy actually.

The differences come in the more avanced capabilities and add on features and products. Neptune pretty much owns the market and is continually improving and adding new capabilities.

If the only thing you want to do is turn on a heater when the temp drops or shut down some pumps and skimmer when you feed then prety much any controller should work fine. Heck, you could do all of that for under $25 dollars with an Arduino and some relays.

If you want to use a controller to truly control everything for your tank - my opinion would be to probably go straight to an Apex.
