For a 180, 5'x24''x30'' -tall, would you go with 250w or 400w MH?

Edit: Keep in mind I have a canopy so the lights would be inside it.
 
Depending on what you are going to put in there, you may want to strongly consider LED's. I wished I had made the switch instead of replacing my MH and T5 bulbs. Almost no heat generated so you can pass on the Chiller and I understand that the LED's have a projected 10 year lifespan.

They are kind of pricey, but it pays quickly when you consider the heat issue, replacing bulbs and energy consumption.
 
For a 30" tall tank, I would suggest two 400 watt halides. I think that 800 watts would provide sufficient light for corals even at the bottom of the tank.

If you are using a canopy, you could probably get away with a pair of 250 watt halides along with some T-5 retrofits; however, I think that the 2 400 watt halides would ultimately be the best bet.
