So just a thought has anyone ever used mason jars as dosing containers? I was thinking about getting some of the bigger ones and adding some Merlock push connect bulkheads. Any foreseen issues?

Sure why not? I use milk jugs for this purpose and those same connects. Since it goes under the stand all you need is functionality.
My only concern was possible the metal around the lid might rust and cause issues.

Well anytime there is metal around the tank that is a possiblity so going with plastic/glass is always wiser if you have a choice. If you're in love with using them though you could throw some clear coat on them to help mitigate rust... but is it worth it?
