A pump with 3/4" npt outlet/inlet takes 1" pvc fittings, is that correct?

It will if you have a 3/4" npt to 1" slip adapter

Hmm, this iwaki 30rt i have is supposed to have a 3/4" npt inlet/outlet. Yet the fitting I got to fit, is a 1" adapter slip/thread. Does that just mean that the female thread side is for 3/4 npt.

Thats what it sounds like. Hard to say for sure without a picture.

Well, for instance, if you wanted to go straight to union from the pump, only a 1" threaded union would work.

Yes it is 1" the model number is MD-30RX
