Apex users...what method do you use to calibrate your temp?

I've looked around and there doesn't seem to be one clearly spelled out method of performing a calibration to a temp probe/sensor. I'm in the process of hooking up an Apex (full version) and the first thing that I activated was the temp sensor. It read about 5 degrees higher than my RKE was reading. I'm just wondering what people are using as a sure fire calibration method?

and I use OXO Good Grips® Digital Instant Read Thermometer and it has work great for 3 years so far

I use several thermometers and just average out the temp and set it to that

I use a laser temp gun to calibrate my probe.
