This is the manifold i made for my hard plumbed system. My question is am i going to wish i put unions in between every valve? My original plan was to make the manifold all one thing and then just union either side. Thoughts?

No, that's fine. No need for a bunch of unions in a manifold. One union to be able to remove it if you ever need to and you're good.
