My 30 gallon reef tank crashed and we transferred everything to a ten gallon quarantine tank and now my live rock is turning white.

Coralline can die for many reasonable reasons considering your tank just crashed , .
Chemistry change , lighting change , flow change all effect its growth.
I have moved rocks changing the flow and witnessed it stop or slow in some places wile starting new growth on others.

Your welcome.
FWIW. I have had rock do this for one reason or another and it seems the dead white makes for a great surface to re grow on and grows faster opposed to dry rock but that my observation iv no evidence to back it up .

+1. It gives a new chance to do something different now. Think of it as an "almost" clean slate

+1, When my calcium dropped to 380 I experienced the same thing.
