I'd like to know how someone determines when a fish in their aquarium is happy or not . Also what makes their fish happy or not .

You're describing many people I personally know! In any case, I would have to disagree based on my observation. I have seen fishes searching for their mate when one jumps into the overflow and also have heard first hand how a fish stopped eating as much when their mate passed away. Those types of behavior to me are indicative of creatures who possess some level of emotions. Of course, I've never seen a fish shed tears.

Edit: On another note, I doubt fish feel emotion like happiness or sadness. Their brain is very simple and does not have the capabilities to "feel" those emotions
