I recently drilled the back of my tank with 2 drains and 1 return with 1" bulkheads. They are located inside my overflow box. My question is: I see some people T off with a cap and a hole on top and others just run a 90* elbow leading down to the sump. What is the purpose of the T and is it better than just a 90??

I'm basically running an Herbie with one main drain and the secondary is an emergency drain. Any feedback is appreciated, thanks!

you don't glue the cap down, usually the cap has a small hole drilled for air flow and make for cleaning the drain easy if you have a clog.

So it's for convenience more or less? I thought it would help with flow/siphoning or to quiet it down in case it got too noisy.

flow and noise control can be taken care of by adding a valve to the line, adjusting the valve would quiet and control the flow of water down to the sump.
